Albanian Fried Dough (Petulla me Vezë)
- 1 1/3 warm water
- 1/2 tbsp salt
- 1 tbsp yeast
- 3 1/3 cups of flour
- 2 eggs
- 1 cup of canola or any vegetable oil for frying
Combine water, yeast and sugar, in a large bowl and let it sit for five minutes. Gradually stir in the 3 cups and salt of flour and continue to stir until you get a smooth batter. Meanwhile whisk the eggs in a small bowl for a few seconds and add to the batter. At this moment stir in the 1/3 of the flour left and beat the butter for 2-3 minutes. Cover the bowl with a towel and let rest for 30 minutes. Heat one cup of vegetable oil over medium heat. With a large spoon, scoop one spoon at the time of batter into the oil. Fry for two minutes on each side or until golden brown. Keep adding oil if needed. Remove the fried dough and place them in a paper towel.
- When you get a scoop of the batter it should not droop of the spoon as easily.
- The heat should be always constant to medium heat.
