Oven Baked Large Beans (Fasule të Pjekura në Furrë)

16 oz dry beanslarge beans
3 medium onionschopped
1 ½ olive oil
1 cup tomatoeschopped
1 pinch pepper
1 pinch salt

Soak the dry bean overnight or 10-12 hours.

Boil in a pot with water until the beans are soft.

Meanwhile, stew the chopped onions in the oil. Add the tomato, parsley, salt pepper and little water. Boil the sauce for few minutes.

After you have drained the beans place them in a shallow baking dish. Pour the sauce on the beans. Bake them in the oven in 400F for about 40 minutes.

Towards the end add a little water and mix again and let it cook for 15 more minutes.

Served with pickles, feta cheese or olives.
