Tomato Cucumber and Roasted Pepper Salad (Mediterranean Salad)

 2 large tomatocubed in bite size
 1 red onion sliced thinly in semicircle
 2 small seedless cucumberor 1 large seeded and cut in bite size cubes
 1 red pepperor green or yellow with thick skin, roasted, skin pealed and chopped in slices
  cup olivespreferred without the pit
 2 tbsp parleychopped
 5 oz feta cheesecubed (goat, cow, sheep) to your preference
 4 tbsp extra virgin olive oil
 2 tbsp lemon juicefreshly squeezed
 1 pinch saltas desired
 1 pinch pepperas desired
 1 pinch dry oregano

Place the first five ingredients in a large bowl.

In the meantime whisk together in a smaller bowl the olive oil, salt and lemon juice.

Pour this over the vegetables in the first bowl. Toss them lightly together then place it in a serving plate.

On top of that add feta cheese and season with black pepper, oregano and drizzle some olive oil.
