Orange Leek Salad Featured

 1 sweet orangesliced thinly with skin on
 1 medium leeksliced
 ¼ cup parsleychopped
 2 tbsp extra virgin olive oil
 2 tbsp lemon juice
 1 pinch salt

Clean the orange and leek well and slice into thin rings.

Place the first 3 ingredients in a large bowl salad. Toss with olive oil and lemon juice right before serving.
