Arugula also known as rugula or rucola is very aromatic vegetable and very rich in vitamin A and C. With dark green leaves and very low in calories like many vegetables it is widely used in dishes.

Arugula Salad with Lemon and Parmesan Featured

 4 tbsp extra virgin olive oil
 2 tbsp fresh lemon juice
 1 tsp lemon skinfinely grated
 4 cups baby arugula
 1 cup cherry tomatoeshalved
  cup Parmesan cheeseor crumbled feta cheese
 2 tsp lemon zest
 3 basil leaves
 1 pinch saltto taste
 1 pinch pepperto taste

After washing and pat dry the arugula and cherry tomatoes, place them and basil leaves in a salad bowl.

Meanwhile, on a small bowl whisk together olive oil, lemon juice, zest of lemon, salt and black pepper until they are all incorporated in a creamy dressing.

Drizzle the dressing over tomatoes and arugula and toss gently with your hands to coat.

Sprinkle parmigiana cheese on the top. Ready to serve.
