Albanian Cornbread with Feta Cheese (Bukë Misri me Djathë)

Albanian cornbread is a tender crumbly type of bread made with cornmeal, egg, milk and baking powder batter. You can eat it plain with cheese, olives, serve it with stews, soups, salads or use it as stuffing. Albanian cornbread can be made in different versions: plain or with, leeks, spinach, zucchini and feta cheese.

 2 cups yellow cornmealor corn flour
  cup all purpose flour
 ¼ cup vegetable oil
 1 ½ cups crumbled feta cheese
 1 tbsp butter
 1 tsp salt
 1 ½ cups milk
 1 egg
 1 ½ tsp baking powder
 1 tbsp cornmealfor dusting the baking pan

Preheat oven at 385 degrees F.

Coat the baking dish with soft butter and dust the bottom of baking dish with cornmeal.

In a large bowl, combine cornmeal, flour, oil, soft butter, salt and mix by hand until all moistened.

Add the egg, baking powder and milk. The cornmeal batter should be pourable consistency.

After all ingredients are all combined add feta cheese into the batter.

Pour the cornmeal batter into the baking pan and spread evenly.

Bake covered at 380 degrees F for 20 minutes.

Than uncover the baking pan and bake until golden brown and the edges are separated from the pan. The uncovered baking time depends on the type of the pan you are using, around 10-15 minutes.

Remove from oven and allow to cool down.
