Quails with Onions (Thelleza me Qepë)

Ingredients

  • 6 quails, cleaned
  • 2 lb vidalia onions, roughly sliced
  • 1 cup white wine
  • 8 garlic cloves
  • 2 tomatoes, chopped
  • 1 tbsp tomato paste
  • 3 tbsp butter
  • 1 tbsp olive oil
  • salt
  • black pepper
  • bay leaves
  • 2 cups water

Preparation

Season quails with salt and black pepper. Melt the butter with 1 tbs of olive oil in a pressure cooker pot. Brown the quails on all sides on medium high heat until the skin becomes crispy. Remove quails from the pot and set aside. On the same pot add  onions and garlic and sauté until golden. Add white wine on the pot to de-glaze. Let simmer for up to 4 minutes until it evaporates. Then add 2 chopped tomatoes and 2 tbs of tomato paste. Return the quail to the pot. Add bay leaves, salt, black pepper and 2 cups of water. Cover the pressure cooker and let cook for 30-40 minutes.

Serve with crusty bread.

Note:
If you don’t have a pressure cooker, this dish can be cooked on a regular cooking pot on slow hear for about an hour to an hour and 15 minutes.
