Crepes with Cheese and Garlic (Petulla të Fshira me Hudhra)

Crepe is a type of very thin layer of pancake. Crepes with cheese and garlic  is a very old traditional Albanian recipe. They are made in many countries, but the origin is from a region to the northwest of France. They are usually made with wheat flour. In southeast Albania this is a dish that is used very often because it’s inexpensive but also very tasty. This recipe is divided in a few steps: making the batter, frying the batter to create crepes, making the sauce and layering them on the baking pan.


  • 2 large eggs
  • 1 1/2 cup of milk or water
  • 2 cup all-purpose flour
  • 1 tsp salt
  • 2 tbsp butter
  • Pam non-stick cooking spray
  • 5-6 cloves of garlic mashed or pressed
  • 1 cup crumbled feta cheese (any white hard cheese like sheep, cow or goat)
  • Flat leaf parsley, finely chopped
  • 1/2 cup water for garlic sauce
  • 4 tbsp butter for sauce


In a bowl, mix together the dry ingredients. Beat eggs into 1/1/2 cup milk or water and butter. Gently stir the mixture into dry ingredients, mixing until moisten the flour. If batter seems thick add more milk. Gradually whisking until you get a smooth batter with no lumps. If you have a blender you can mix all of them for few seconds and the process will be much faster.


Heat a 10 inch non-stick skillet over medium high heat.
Pour 1/4 of the cup of batter in the middle of skillet lightly oiled or sprayed with non-stick cooking spray for each crepe. Right way start tilting the skillet with a circular motion so that the batter coats the surface evenly. While the crepe is cooking always have ready the cup filled for the next crepe. Cook the crepe for about 2 minute or until you see the edges getting a little brown and loose. Then turn them with the spatula on the other side. Set the crepe on the plate to cool. The skillet has to be lightly oiled before each crepe batter you pour in it.

Making the sauce and layering:

In a small skillet combine butter, 3-4 mashed or pressed garlic, and chopped parsley. Once the garlic it sizzles for about 30 seconds add 3/4 cup water and 1/2 tsp salt. Its important not to burn the garlic or it will become bitter. Bring garlic sauce to a boil and simmer for few minutes. Remove the skillet from the heat.
Spray 9 inch baking dish with non stick cooking spray and start layering crepes in the way that you cover the whole pan. On each layer of crepes placed on the baking pan add crumbled feta cheese and drizzle a few spoons of sauce with butter and garlic on the top. Repeat the process until all crepes are layered. Cut the crepes  in square pieces and drizzle thorough with garlic sauce. Bake on preheated oven 400 degrees for 15 to 20 minutes.
