Albanian Fried Dough (Petulla me Vezë)
- 1 1/3 warm water
- 1/2 tbsp salt
- 1 tbsp yeast
- 3 1/3 cups of flour
- 2 eggs
- 1 cup of canola or any vegetable oil for frying
Mix the first three ingredients with a wooden spoon in a large bowl in the same order as they appear in the list. Gradually stir in the 3 cups of flour and continue to stir until you get a smooth batter. Meanwhile whisk the eggs in a small bowl for a few seconds and add this to the batter. At this moment stir in the 1/3 of the flour left and beat the butter for 2-3 minutes. The batter should be more to the thicker side. Cover the bowl and let sit for 15-20 minutes. In a skillet heat 1/2 cup of oil over medium high. Scoop one spoon of batter and place it next to each other, leaving enough space for them to expand. Fry for one minute on each side or until golden brown. Keep adding oil as needed. The skillet should not be with out oil during frying the batter.
Note: When you get a scoop of the batter it should not droop of the spoon as easily.
The heat should be always constant to medium high.
Always leave space between spoonful butter to the other on frying skillet.
